I don’t really understand your reason why gravity shouldn’t be quantized (although string theory is an effort to quantize gravity too, so you really can’t use it as an alternative in this sentence).
However, physicists prefer not to invoke string theory unless they have to because it is a very big assumption. We have literally no evidence for any of its postulations (extra dimensions, supersymmetry, vibrational modes = particle species). Many physicists would prefer it if they could find a quantization for gravity without needing to add all this potentially false stuff.
We know general relativity breaks down and yields absurd results in certain limits, i.e. planck scale and singularities. We know that space time is probably quantized to some extent as well at this scale, or perhaps continuous at all scales with some strange properties. I can’t imagine why we wouldn’t want to further explore QM at these small scales.
As a side note, gravity gives a nice test bed on occasion too. For instance: Hawking radiation provides an interesting link between classical thermodynamics, QFT, and gravitation. In some senses gravitation serves as a nice test for theories (and a good way for theories to fail!)
String theory postulates that elementary particles are 1-D vibrating strings rather than point-particles. LQG tries to quantize spacetime itself rather than considering fields in spacetime.

Sorry but string theory also quantizes spacetime. In LQG spacetime is fundamentally discrete. This doesn’t mean that spacetime couldn’t be fundamentally continuous and quantized at the same time, this depends on the algebra of operators you choose, and actually there are models of non-commutative geometry applied to gravity that are much more similar to string theory on this point.

I’m not so sure that saying LQG is popular is a true statement; most practicing formal theorists that I know work on String theory or related subjects.
In general, it’s nice to have multiple theories that can accomplish the same goal; sometimes different formalisms make different aspects of the same physics more obvious, which can lead to further insights or simplifications of calculations.
Perhaps someone with more knowledge of LQG can expound on why someone might choose it over String Theory as a formulation for quantum gravity.
I didn’t understand the first paragraph of your message. Classical mechanics breaks at subatomic level for fundamental physical reasons, not because “doing statistics with a continuum is impossible”, the same obviously holds for any classical field theory.
Also, the solution to the Gibbs paradox is just assuming the indistinguishability of identical particles, you don’t even need any QM in order to formulate it (as a matter of facts, the problem was solved way before the formalization of QM).
Gibbs was forced into assuming the indistinguishability of particles. So he artificially put it in there.
